Pistachio Ice Cream Pie

Pi Day is celebrated on March 14th every year! (3.14)
Your feeds will be filled with spring time pies in celebration and your math nerds will be testing their memories to see who can remember the most digits of Pi! What a glorious day.

I celebrated Pi Day in high school! Me and my siblings were lucky enough to have the town’s favorite math teacher, Mr. Awais, at least once throughout our high school careers. On Pi Day, the class would bring in all sorts of pies to share during our math period and we would have a class competition to see who can say the most numbers of Pi. High school was less than a fun time, we’ll say, but I have very fond memories of Pi Day.

This week, we’re making a Pi-stachio Ice Cream Pie to celebrate Pi Day! Although the ice cream is usually the star of the show, I have to say, the Pistachio Graham Cracker Crust realllyyyyy makes this pie amazing. We get a nice balance of sweet and salty, and nutty pistachios with a hint of almond extract. Simple flavors with extraordinary results.
