Chubby Hubby Ice Cream

Ben & Jerry’s has been in everyone’s freezer for years. This isn’t a coincidence- they’re just THAT good!

We’re taking on the challenge to recreate some of your favorite Ben & Jerry’s flavors completely from scratch!
I had you guys write in on my Instagram Stories (@theicescreamqueen) and tell me what flavors you want to see made homemade!

First up – CHUBBY HUBBY!

I wasn’t too familiar with this flavor and it turns out, it’s pretty hard to find in stores.

Chubby Hubby is vanilla malt ice cream with chocolate and peanut butter covered pretzels and peanut butter and fudge sauces swirled in!

I even ordered the Ben & Jerry’s Ice Cream & Dessert Book on Amazon just so we can make this taste as authentic as possible.

Malt powder may be a new ingredient for some! It’s a dissolvable powder commonly mixed into baked goods or even just a plain glass of milk, and is made from malted barley and wheat flours. It gives this really subtle toasty, nutty flavor and works PERFECTLY in this ice cream!

If you do try this out, make sure you get the Carnation Malted Milk Powder and not any flavored versions like Ovaltine!

Chubby Hubby Remake

Homemade Chubby Hubby! A famous Ben & Jerry's flavor with vanilla malt ice cream, chocolate covered, peanut butter filled pretzels and peanut butter and fudge sauces!

Ingredients
  

Vanilla Malt Ice Cream

  • 2 eggs whole
  • 3/4 cup sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/3 cup malt powder
  • 2 tsp vanilla extract

Fudge Sauce

  • 3/4 cup heavy cream
  • 1/4 cup brown sugar
  • 1/4 cup cocoa powder
  • 1/2 cup corn syrup light
  • 2/3 cup dark chocolate chips or chopped chocolate
  • 1 tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Peanut Butter Sauce

  • 1/4 cup sugar
  • 1/4 cup corn syrup light
  • 1/4 cup water
  • 1/2 cup peanut butter creamy
  • 1/2 tsp vanilla extract

Chocolate Covered, Peanut Butter Filled Pretzels

  • 1 cup peanut butter filled pretzels
  • 1 cup dark chocolate

Instructions
 

Making The Ice Cream:

  • Using a mixer, whisk eggs on medium speed for 1-2 minutes until light and fluffy.
  • Whisk in the sugar slowly and whisk for an additional minute.
  • Add in the whole milk and heavy cream and whisk until combined.
  • Whisk in the malt powder and vanilla and let stand for 10-15 minutes.
  • Churn to your ice cream machine's instructions.

Fudge Sauce

  • Add heavy cream, brown sugar, cocoa powder, and corn syrup to a pot and bring to a low boil for 30 seconds.
  • Remove from heat and add the chopped chocolate, butter, vanilla and salt.
  • Pour into a heat proof container and let cool to room temperature before storing in the fridge.
  • For serving – microwave for about 20 seconds.

Peanut Butter Sauce

  • Add all ingredients into a pot on medium heat. Stirring frequently.
  • Bring to a low boil for about 30-45 seconds.
  • Pour into a heat proof container and let cool to room temperature before storing in the fridge.
  • For serving – microwave for about 20 seconds.

Chocolate Covered Peanut Butter Pretzels

  • Melt chocolate in heat safe bowl.
  • Coat each pretzel fully and place on sheet tray lined with parchment or plastic.
  • Freeze until chocolate is set.

Assembly

  • Layer ice cream with swirls of peanut butter and fudge sauces and sprinkles of chocolate covered peanut butter pretzels.
  • Freeze over night and enjoy!
